Peggy’s Salad

Ingredients:

– 1 6-ounce package cherry Jell-O, or other cherry gelatin dessert – 4 cups boiling water, divided – 32 large marshmallows – 1 20-ounce can crushed pineapple in heavy syrup – 1 cup Real California heavy whipping cream – 1 cup shredded Real California Jack cheese – 1 cup shredded Real California Cheddar cheese

Directions:

Prep time: 20 minutes, plus time for salad to cool and to set

In a large bowl, combine Jell-O and 2 cups boiling water, stirring to dissolve Jell-O. In a medium bowl, combine marshmallows and 2 cups boiling water, stirring to dissolve marshmallows. Stir marshmallow mixture into Jell-O mixture; set aside to cool to room temperature, stirring occasionally. Stir in pineapple (with its juices). Transfer to a 3-quart serving bowl or to twelve 1-cup serving bowls; set aside in the refrigerator until set.

Whip whipping cream to soft peaks; spread over salad. Sprinkle cheeses on top; set aside in the refrigerator until ready to serve.
