Pimento Cheese Hot Dogs

Ingredients:

Pimento Cheese: – 8 ounces shredded Real California sharp Cheddar cheese – 4 ounces Real California cream cheese – 1/4 teaspoon salt – 1/4 teaspoon pepper – 1 4-ounce jar sliced or diced pimentos, drained Hot Dogs: – 8 hot dogs – 8 hot dog buns, such as Buttermilk Hot Dog Buns, split : – Pickle chips (optional) :Cheddar Cheese, Pimento Cheese, Pickles, Hot Dogs, BBQ

Directions:

Prep time: 15 minutes

Cook time: 5 minutes

To make the Pimento Cheese: In the bowl of a food processor, combine Cheddar cheese, cream cheese, salt, and pepper, pulsing to combine. Add pimentos and pulse to coarsely chop. Set aside.

To make the Hot Dogs: Cut the hot dogs almost in half horizontally, so they open like a book.

Prepare a grill to medium-high and lightly oil the grate. Grill hot dogs, splayed open, until heated through and lightly charred, 2 to 3 minutes per side. Grill buns, cut sides down, until lightly toasted, about 1 minute.

Arrange hot dogs in buns and top with pimento cheese. Serve with pickle chips if desired.
