California Blue Cheese Coins with Honeycomb and Chocolate

Ingredients:

– 1 cup finely chopped toasted walnuts – 2 cups unbleached all-purpose flour – 1 cup Real California unsalted butter – 6 oz. Real California crumbled blue cheese plus additional for topping – 1/4 teaspoon crushed black pepper – 1/4 teaspoon salt – Dark chocolate – Honeycomb

Directions:

Mix all ingredients in a large bowl until ball forms. Roll dough into a log until diameter reaches 1 1/2 inches. Wrap in parchment paper and twist ends. Refrigerate for 6 hours.

Preheat oven to 350˚F. Cut coins into1/4 inch pieces and place on parchment-lined baking sheet. Bake 10-13 minutes until light golden brown. Let cool for 10 minutes.

Top each coin with a small piece of honeycomb, a crumble of blue cheese and shaved dark chocolate.
