Brie Quesadilla with Fruit Salsa

– 12 oz. ripe Real California Brie – 4 9-inch or 4-inch flour tortillas Salsa: – 2 red pears, diced – About 1/2 cup quartered grapes∶ red, green, or a combination – 2 tablespoons lime juice – 2 tablespoons chopped mint – 1/4 teaspoon ground black pepper – 3 tablespoons chopped toasted walnuts Real California unsalted butter for pan

Directions:

Combine salsa ingredients. Spread about 6 ounces of Brie on each of 2 large tortillas. Top each with half of the salsa and remaining tortillas. Brown in greased skillet on both sides until cheese is melted. Cool slightly, cut into wedges.

For folded version, combine salsa ingredients, spread about 3 ounces of Brie on half of each small tortilla. Top each with a quarter of the salsa and fold. Brown in greased skillet on both sides until cheese is melted. Cool slightly before eating.

4 to 6 appetizer servings or 4 servings as shown (folded)
