California Cheese & Bacon Balls



– 4 ounces California cream cheese, softened – 4 ounces California Ricotta cheese, crumbled – 1 teaspoon freshly ground black pepper – 1/4 teaspoon salt – 3 cups California sharp Cheddar cheese, grated – 1/2 cup green onion, finely chopped – 1/2 cup cooked applewood smoked bacon, finely chopped

Makes 32 cheese balls

Combine cream cheese, ricotta cheese, pepper and salt in a medium bowl. Mix until well combined. Add 2 cups of the grated cheddar and 1/4 cup of the green onion. Stir until the ingredients are evenly mixed. Line a sheet tray with parchment paper. Drop teaspoon sized balls onto the paper lined tray. Cover with plastic wrap and refrigerate for 1 hour. Moisten hands with water and roll into balls. In a small bowl combine the remaining 1 cup of cheddar cheese, remaining 1/4 cup of green onion and chopped bacon. Roll each ball with the cheddar, onion, bacon mixture. Serve with buttery crackers, crostini or celery sticks.
