Directions:

The California Goddess Salad: Romaine lettuce, green onions or chives, Persian cucumbers, bocconcini or burrata cheese, pistachios, parsley, avocado and Dairy-licious Green Goddess Dressing. Optional: Grilled steak or chicken.

The Taco Salad Bowl: Romaine lettuce, Cheddar cheese, poblano peppers, pickled red onions, tortilla strips, pumpkin seeds, corn, Cotija, panela cubes and Chipotle Crema Dressing. Optional: Grilled steak or chicken.

The West Coast Greek Salad: Romaine lettuce, cucumbers, red onions, kalamata olives, pepperoncini, Feta, oregano, parsley, pita chips and Dairy-licious Green Goddess Dressing. Optional: Grilled steak or chicken.

To make the Dairy-licious Green Goddess Dressing: In a food processor, combine sour cream, parsley, basil, oil, 2 tablespoons lemon juice, and anchovies, if using, and process to puree. Transfer to a bowl and stir in chives and tarragon. Add more lemon juice, salt, and pepper to taste.

Makes about 1 1/2 cups

To make Chipotle Crema Dressing: Combine all ingredients in a blender or food processor. Blend until smooth. Adjust salt if necessary. Transfer to a jar and seal tightly. Refrigerate for 1 hour before serving.

To make Tangy California Dairy Dressing: Place all ingredients in a blender or food processor and process until smooth, about 2 minutes. You can store refrigerated in a tightly sealed container for up to one week.
