In a medium bowl, mix butter, cheese, parsley and thyme together until combined. Season with salt and pepper, to taste.
Transfer butter mixture to a sheet of parchment paper or plastic wrap. Form butter into a log and wrap it tightly. Refrigerate until firm, about 1 hour. Allow butter to come to room temperature for 10 minutes before rolling in the cherry mixture.
On a large plate, combine cherries, pistachios, orange zest and chopped rosemary. Roll butter log in the cherry mixture, pressing gently to adhere. Garnish butter log with rosemary sprigs, and serve with crostini.
Yield: 8-10 servings
