Ingredients:

– 1 cup (2 sticks) Real California unsalted butter, room temperature – 1/4 cup finely shredded Real California aged Cheddar cheese – 1 tablespoon chopped fresh parsley – 2 teaspoons chopped fresh thyme – Kosher salt and freshly ground black pepper, to taste – 1 cup dried cherries, chopped – 1/4 cup roasted pistachios, chopped – 1 orange, zested – 2 tablespoons chopped fresh rosemary, plus rosemary sprigs, for garnish – Crostini, for serving :Butter log, Cheddar Cheese, Seasonal, Holiday, Christmas, Bread & Butter

Directions:

Prep time: 20 minutes

Cook time: 0 minutes (plus chilling time)

In a medium bowl, mix butter, cheese, parsley and thyme together until combined. Season with salt and pepper, to taste.

Transfer butter mixture to a sheet of parchment paper or plastic wrap. Form butter into a log and wrap it tightly. Refrigerate until firm, about 1 hour. Allow butter to come to room temperature for 10 minutes before rolling in the cherry mixture.

On a large plate, combine cherries, pistachios, orange zest and chopped rosemary. Roll butter log in the cherry mixture, pressing gently to adhere. Garnish butter log with rosemary sprigs, and serve with crostini.

Yield: 8-10 servings
