Lemon, Caper and Shallot Butter

Ingredients:

– 1/2 cup (1 stick) Real California unsalted butter, room temperature – 1 tablespoon capers, drained and very coarsely chopped – 1 tablespoon minced shallot – 2 teaspoons fresh lemon juice – 1 teaspoon finely grated lemon zest – 1/2 teaspoon chopped fresh thyme – Lemon sea salt or lemon zest sea salt to taste (optional)

Directions:

Prep time: 10 minutes, plus time for butter to chill

In a small bowl, combine butter, capers, shallot, lemon juice, lemon zest, and thyme. Add sea salt to taste, if using. Cover and refrigerate for at least 1 hour for flavors to blend. Makes about 2/3 cup.
