Finely shred cheese (about 2 cups); reserve. Mix flour, sugar and salt; work in butter until it resembles coarse cornmeal. Work in cheese. Add cold water 1 tablespoon at a time, stirring after each addition until dough can be formed into a cohesive ball. Shape the dough into a flat disk; chill. Roll dough about 1/8-inch thick.
