Chicken and Cheese Chilaquiles



– Cooking spray – 1 11- to 13-oz bag of corn tortilla chips – 3 cups green salsa, preferably homemade – 2 cups diced cooked chicken – 2 cups shredded Real California Mexican cheese blend, divided – 1/4 cup chopped fresh chives – Real California sour cream for topping (optional)

Preheat an oven to 350°F. Coat a 9-by-13-in. baking dish with cooking spray and set aside.

In a very large mixing bowl, combine the chips, salsa, chicken, and 1 c. of the cheese. Transfer to the prepared baking dish and top with the remaining 1 c. of cheese and chives. Cover with foil and bake until the cheese is melted and the mixture is heated through, 20 to 30 minutes.

Top with sour cream before serving.
