California Fresh Tomato and Sweet Corn Salsa

Ingredients:

– 5 California Roma tomatoes, seeds and core removed, diced small – 1 ear California sweet corn, kernels removed – 1 red Fresno chile pepper, seeds and ribs removed, diced small – 2 heaped TBSP minced red onion – 2 TBSP cilantro, minced – Juice of 1 lime – 1 teaspoon salt, more to taste – ⅛ teaspoon ground white pepper – 4 tablespoons crumbled Real California Queso Fresco cheese – To serve∶ tortilla chips, sliced mini peppers :Salsa, Appetizer, Queso Fresco, Corn

Directions:

Prep time: 10 minutes

Combine the tomatoes, corn kernels, chile pepper, onion, cilantro, lime juice, salt, and white pepper in a bowl and stir. Allow to marinate for at least 10 minutes for flavor to develop. Top with the crumbled Queso Fresco cheese right before serving.

Serve with tortilla chips, sliced mini peppers and cold glass of California Sauvignon Blanc.

NOTE: This easy salsa makes the best of California’s fresh summer produce, in fact, it tastes like a bite of the Golden State! Ripe tomatoes and sweet corn pair perfectly with the salty creaminess of Real California Queso Fresco. The recipe can be doubled – or tripled – depending on the size of your crowd. Pour a glass of chilled California Sauvignon Blanc or sparkling wine and call it a party.
