Arrange bread on a work surface. Spread 4 slices with cream cheese and top with bananas. Spread remaining 4 slices with cookie butter and arrange on top of bananas, cookie butter side down. Heat 10-inch frying pan on medium for 1 minute. Add 2 Tablespoons butter. After butter melts, add 2 sandwiches and cook until golden brown, 1-3 minutes per side. Wipe out skillet and repeat with remaining 2 Tablespoons butter and 2 sandwiches. Cut sandwiches in half or into sticks or squares, sprinkle with powdered sugar, and serve with caramel sauce.
