Sei Cheese Pizza

Ingredients:

Herbed Ricotta Cheese: – 24 ounces Real California whole milk ricotta cheese – ½ cup Real California Dry Jack cheese, shredded – ¼ cup chopped Italian parsley – 4 teaspoons lemon juice – 1 tablespoon chopped fresh garlic – ½ tablespoon dried oregano – ½ tablespoon salt – ½ tablespoon red pepper flakes – ¾ teaspoon ground black pepper Pizza and Toppings: – 6 portions prepared pizza dough, 12 ounces each – 4 ½ cups Real California mozzarella cheese, shredded – ¾ cup Real California provolone cheese, shredded – ¾ cup Real California cheddar cheese, shredded – 1 ½ cups Real California crumbled blue cheese – 1 ½ cups Real California Dry Jack cheese, shaved

Directions:

To prepare Herbed Ricotta Cheese, combine all ingredients in large mixing bowl, blending until thoroughly mixed.

To prepare Pizza, preheat oven to 525°F. Stretch one portion pizza dough to 11-inch round. Combine mozzarella, provolone and cheddar cheese. Spread ½ cup Herbed Ricotta Cheese evenly over dough, leaving ¾ inch perimeter. Sprinkle evenly with 1 cup cheese blend, ¼ cup crumbled blue cheese and ¼ cup shaved Jack cheese. Bake 5 to 7 minutes until crust is well browned and cheese is bubbly.
