First Alarm Coconut Craisin® Cookies



– 1/2 cup Real California butter, softened – 1/2 cup granulated sugar – 1 large egg – 1/2 teaspoon vanilla extract – 1 cup all-purpose flour – 1 teaspoon baking soda – 1/4 teaspoon salt – 2 2/3 cups tightly packed sweetened flaked coconut – 1 cup chopped pecans – 1 cup Craisins or dried cranberries – 1/2 cup white chocolate chips – 1/4 cup packed brown suger


1. Heat oven to 350°F.2. In large mixer bowl, beat butter and sugars until fluffy.3. Beat in egg and vanilla.4. In another bowl, mix flour baking soda and salt; mix into butter mixture to blend thoroughly. Mix in coconut, pecans, Craisins® and chocolate chips to distribute evenly.5. Cover and chill dough 1 hour.6. Drop 1-inch mounds of dough, spaced 2 inches apart, onto greased baking sheets.7. Bake 8 to 10 minutes until edges are lightly browned.8. Cool on pans 10 minutes, then remove to racks to cool completely.

Makes 5 to 6 Dozen Cookies
