– 24 cheese tortellini, plus extra for testing doneness – 1/2 cup Real California Greek-style yogurt or sour cream – 1/4 cup prepared pesto – Salt – Pepper – 24 small balls Real California fresh mozzarella (can substitute marinated mozzarella balls for extra flavor) – 24 large basil leaves – 24 thin slices salami* – 24 olives or cherry tomatoes Special equipment: Twenty-four 4 1/2- to 6-inch skewers or toothpicks

Prep time: 25 minutes

Cook time: 10 minutes

Cook tortellini according to package directions.

Meanwhile, in a small bowl, combine yogurt or sour cream and pesto. Add salt and pepper to taste and set aside.

Drain tortellini. Arrange a mozzarella ball on a skewer. Add a basil leaf (folded in half if very large), salami slice (folded in half or quarters), and olive or cherry tomato. Repeat with remaining ingredients.

Arrange skewers on a serving plate with pesto mixture alongside and serve. Makes 24 skewers.

*Vegetarian Option: Replace salami with 24 marinated artichoke heart pieces.
