California Birthday Cake Cheesecake



– 14 small shortbread cookies, crushed – 4 tbsp Real California butter, melted – 1/4 cup water – 1 packet unflavored gelatin – 2 (8 oz) packages Real California cream cheese, room temp – 1/2 cup Real California vanilla yogurt – 1/2 cup sugar – 1 tsp vanilla flavoring – 3 tbsp rainbow sprinkles, plus more for garnish – Whipped cream :baking

Place decorative cupcake liners in a muffin tin.

In a small bowl, mix crushed cookies and butter. Press mixture into the bottom of cupcake liners. Heat water in a small sauce pan, add unflavored gelatin and stir to dissolve. Using a hand mixer, blend cream cheese, yogurt, sugar, dissolved gelatin and vanilla flavoring. Fold in sprinkles.

Evenly distribute the cream cheese mixture between the cupcake liners and refrigerate until set, at least two hours.

Top with whipped cream and sprinkles before serving.
