- 8 ounces California cheddar cheese
- 10 ounces (2-1/2 Cups) all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 10 ounces (1-1/4 Cup) unsalted butter
- 7 tablespoons cold water
Directions
Finely shred cheese (about 2 cups); reserve.Mix flour, sugar and salt; work in butter until it resembles coarse cornmeal.Work in cheese.Add cold water 1 tablespoon at a time, stirring after each addition until dough can be formed into a cohesive ball.Shape the dough into a flat disk; chill.Roll dough about 1/8-inch thick.
