Porcini Bliss Butter



– 1 cup dried porcini mushrooms – 3 cups hot water – 1-pound Real California butter – 1 teaspoon salt

Put the dried mushrooms in a medium bowl and pour the hot water over them. Soak until softened, about 20 minutes. Remove the mushrooms, reserving the soaking liquid, and chop them. Strain the liquid through a paper-towel-lined sieve into a medium saucepan and reduce by ¾’s. Add California butter, mushrooms and salt to cooking liquid. Over medium heat, melt butter, reduce heat to low and poach mushrooms for 30 minutes. Strain into a small container and let cool slightly.
