Ingredients
Look for dairy brands with the Real California seals.


8 Ounce california cheddar cheese
10 Ounce (2-1/2 cups) all-purpose flour
2 Tablespoon sugar
1 Teaspoon salt
10 Ounce (1-1/4 cup) unsalted butter
7 Tablespoon cold water
10 Ounce (2-1/2 cups) all-purpose flour
2 Tablespoon sugar
1 Teaspoon salt
10 Ounce (1-1/4 cup) unsalted butter
7 Tablespoon cold water
Instructions
Finely shred cheese (about 2 cups); reserve.
Mix flour, sugar, and salt; work in butter until it resembles coarse cornmeal.
Work in cheese.
Add cold water 1 tablespoon at a time, stirring after each addition until dough can be formed into a cohesive ball.
Shape the dough into a flat disk; chill.
Roll dough about 1/8-inch thick.
