We happy cows are used to making lemonade out of lemons. But our favorite thing is to make great things out of milk. One of our personal summertime favorites is Port-Poached Pears and Ricotta. It’s a light and refreshing dessert that’s perfect on a hot summer day. Especially since it’s made with Ricotta, this month’s featured cheese. Since this recipe is cow-approved it’s guaranteed to make you want seconds (maybe even thirds).
